Birrificio Leder

“Da una grande passione, da un hobby e da radici storiche ben profonde è nata l’occasione di sviluppare un bellissimo progetto lavorativo legato all’arte birraia e alla sua storia.”

Dopo una laurea in ingegneria il giovane mastro birraio Fabrizio passa agli studi dell’arte birraia in Boemia, grazie al gemellaggio tra la Valle di Ledro e la Repubblica Ceca, ma è la sua passione per l’homebrewing (produzione di birra da casa) che porta, nel 2015, all’apertura del Birrificio Artigianale Leder.

Le birre vengono prodotte utilizzando acqua pura di sorgente alpina, non sono filtrate o pastorizzate ed alcune sono ispirate alla tradizione birraia ceca, in quanto, durante la prima guerra mondiale, la popolazione della Valle di Ledro venne esportata in Boemia fino a conflitto finito.  Qui le donne impararono molte ricette tradizionali tra cui anche l’arte del produrre la birra in casa; tornate nella vallata iniziò la produzione della birra artigianale, coltivando cereali e utilizzando il luppolo selvatico raccolto lungo i torrenti della Valle di Ledro.

Il Birrificio vuole ripristinare questa tradizione producendo diverse tipologie di birre per soddisfare i gusti di chiunque.

“From a great passion, a hobby and very deep historical roots, the opportunity arose to develop a beautiful work project linked to the art of brewing and its history.”

After an engineering degree, the young master brewer Fabrizio moves on to studying the art of brewing in Bohemia, thanks to the twinning between Valle di Ledro and the Czech Republic. His passion for homebrewing  leads in 2015 to the opening of the Leder Craft Brewery.

The beers are produced using pure Alpine spring wate; they are not filtered or pasteurized and some are inspired by the Czech brewing tradition. During WW1 the population of Valle di Ledro was forced  to move to Bohemia until the end of the conflict. Here the women learned many traditional recipes including the art of brewing beer at home; back in the valley, the production of craft beer began, growing cereals and using wild hops harvested along the streams of Valle di Ledro.

The Brewery wants to restore this tradition by producing different types of beers to satisfy anyone's tastes.
